Ingredients for 4 people:
– 500 g of two days old Tuscan bread cut in slices
– 10 tablespoons of olive oil
– 2 garlic cloves
– 3-4 sage leaves, preferably freshly picked
– Salt,
– Black pepper
– 1kg of fresh tomatoes
RECIPE:
Heat the olive oil in a saucepan and add the garlic with the sage. When the garlic starts slizzing, add the slices of bread and fry well in the pan, stirring with a wooden spoon. Add salt and black pepper.
Then add the fresh tomatoes (or peeled) and continue cooking for about 10 minutes stirring constantly.
Add boiling water and cover the pan (low heat) and cook for about half an hour until the “soup” reaches its proper consistency, that is, half-way between the fluid and the solid.
It should be eaten warm, without the addition of cheese.
